Marc Summers
Marc Summers is the founder of Bubala, a celebrated collection of vegetarian Middle Eastern restaurants in London. Raised in Essex, Marc initially pursued a career in finance. However, his passion for food led him to change paths, gaining experience in kitchens in Australia before returning to the UK. Back in London, he worked at notable establishments such as The Palomar and Berber & Q, both as a chef and restaurant manager, where he developed a deep appreciation for Middle Eastern cuisine.
In 2018, Marc launched Bubala as a pop-up, aiming to create a unique, warm and generous Middle Eastern offering which happened to be vegetarian. He opened the first permanent Bubala restaurant in Spitalfields in 2019.
Bubala has expanded to multiple locations, including Soho and King's Cross, earning acclaim for its innovative approach to vegetarian cuisine. His vision emphasises bold flavours and the celebration of vegetables without relying on meat substitutes, reshaping perceptions of vegetarian dining in the city.
